Recipe Numero Uno! Taco Stuffed Bell Peppers!




My first recipe to share!


Ingredients:
  • bell peppers (I've used 3 for a serving of two halves per person)
  • ground beef (ground turkey is also great!)
  • 1 can of black beans (drained and rinsed)
  • seasonings : garlic salt, chili powder, cumin and cilantro (fresh or dried)
  • shredded cheese
  • olive oil 
  • optional - corn and jalapenos

Preheat oven to 400* and rinse your peppers. 

Cut your bell peppers in half, I think they look really pretty to leave the stems on one side.

Remove all the seeds and any white skin 

Then give them a loving massage with olive oil, inside and out!

Put them open side up in your baking dish and pop them in the oven, set a timer for 20 mins.
(side note: I don't know if it's important really but after about 15 mins I flipped the peppers over and let them bake open side down for the last 5 mins)

Peppers are sizzling away in the oven and now we can get started on our meat mixture. 

Put your meat in a skillet and cook on medium heat.
I threw a little chopped red onion in mine, cook thoroughly.

Here is where you can get creative, like certain seasonings for mexican dishes? Don't be shy! Throw whatever you want in there and season to taste!
Add your drained and rinsed beans and seasonings, we had a some leftover corn, so I spooned a little bit in as well.


Here's another optional item, a little salsa, this is my mom's favorite so I put about a 1/4 a cup in.

By the time your meat mixture is nice and hot and ready to go, your peppers should be ready to bring out of the oven. 

Time to stuff those peppers!

Make sure your peppers are arranged in a way that your filling won't spill over too much.

Add a spoon full to each pepper and smash it down with your spoon.

 layer some cheese and another spoon of mixture, and top with more cheese.


~For Jalapeno Lovers~

Cody and I LOVE jalapenos! Mom ... not so much.
 Add a layer of 'peens in the middle and make sure to top with one or two so you know which ones are the spicy ones

Back in the oven they go!

 Bake for 10-15 mins or until cheese is nice and melted.
The stems will pop right off and this is a great meal with no side-dishes, they are very filling and dee-lish!!!!

Leftover meat mixture is great for a taco salad or a yummy wrap!
